Tomoya opened Soma in 2021. Before that, he spent six years at Ippudo Hakata, three of them under the late Aoki Kenji, then two more in a small kitchen in Sapporo whose name he keeps to himself. He does not talk much about cooking. The bar holds eight seats and a single broth pot that is started before sunrise. He prefers it this way — small, slow, finished by the time the city gets loud again.
